current "featured tequila" is: CAMBIO AÑEJO TEQUILA
Cambio Tequila is produced at NOM 1605, Inulina y Miel de Agave Distillery, in the town of Capilla de Guadalupe, Jalisco. Founded by classically trained Chef and Sommelier John des Rosiers, Cambio is a distillation of classic tequila tradition filtered through the culinary science and restless craftsmanship. The name Cambio, meaning change, is what drives their relentless pursuit to improve, build and evolve. Cambio is on a mission to create a higher standard in premium tequila by exploring small quality changes throughout the spirit's creation.
Cambio uses estate-grown agave from the highlands of Jalisco. The agave is cooked low and slow in stone ovens, keeping the piñas whole to maximize flavor. The cooked agave is crushed by a traditional stone wheel known as a tahona. They use deep well water filtered by volcanic soils. Fermentation is performed in wooden tanks at extremely low temperatures. The yeast is more commonly used in wine than tequila, which brings out greater floral and aromatic agave notes. This yeast takes longer to ferment but results in a more flavorful spirit with greater texture and complexity.
Cambio is double-distilled in copper/stainless hybrid pot stills to an uncommonly low proof - below 50% ABV - resulting in an elegant and aromatic Tequila. Every drop of Cambio is rested in specially selected barrels, resulting in a rounder, softer spirit. Cambio Añejo is a blend of tequilas aged in three barrel types: Second use toasted French oak chardonnay barrels (22 months), first use un-toasted French oak chardonnay barrels (15 months) and used natural finish cognac barrels (15 months).
Cambio follows sustainable practices in production and packaging. The label is made from artisan “amate,” an ancient method of creating nonwoven fabric using the barks of indigenous trees that dates back to the Mayas and the Aztecs.
Tequila Connection reviewed Cambio Añejo, 46% ABV, on 25 Feb 2025. All tasting was performed using the official tequila glass from Riedel with the spirit served at room temperature.
This Añejo has a rich-golden appearance and a creamy body that coats the tongue nicely. We observed tears/well-defined legs clinging to the tasting glass.
On the nose - we detected strong aromas including stone fruit, dried fruit, cooked agave, caramel, butterscotch and oak.
On the tongue, we found flavors of fruit (cherry and plumb preserves), baking spices, roasted agave, caramel, crême brúlée with a hint of butterscotch. Tastings mentioned it had a "just right" peppery heat and the oaky tannins presented a slight bitterness during the long-pleasing finish.
