current "featured tequila" is: CAMBIO TEQUILA
Cambio Tequila is produced at NOM 1605, Inulina y Miel de Agave Distillery, in the town of Capilla de Guadalupe, Jalisco. Founded by classically trained Chef and Sommelier John des Rosiers, Cambio is a distillation of classic tequila tradition filtered through the culinary science and restless craftsmanship. The name Cambio, meaning change, is what drives their relentless pursuit to improve, build and evolve. Cambio is on a mission to create a higher standard in premium tequila by exploring small quality changes throughout the spirit's creation.
Cambio uses estate-grown agave from the highlands of Jalisco. The agave is cooked low and slow in stone ovens, keeping the piñas whole to maximize flavor. The cooked agave is crushed by a traditional stone wheel known at a tahona. They use deep well water filtered by volcanic soils.
Fermentation is performed at extremely low temperatures in American white & Mexican pine lined fermentation tanks. The yeast is more commonly used in wine than tequila, which brings out greater floral and aromatic agave notes. This yeast takes longer to ferment but results in a more flavor and greater texture.
Cambio is double-distilled in copper/stainless hybrid pot stills to an uncommonly low proof - below 50% ABV - resulting in an elegant and aromatic Tequila. Every drop of Cambio is rested in specially selected barrels, resulting in a rounder, softer spirit. Cambio Blanco spends time in used French oak wine barrels, adding to the spirits complexity. Cambio Reposado is aged for a month in Burgundy and Bordeaux barrels, and then five more months in French oak Chardonnay casks.
Cambio follows sustainable practices in production and packaging. The label is made from artisan “amate,” an ancient method of creating nonwoven fabric using the barks of indigenous trees that dates back to the Mayas and the Aztecs.
On 02 Mar 2024, we reviewed two of Cambio Tequila's expressions, blanco and reposado, both bottled at 46% ABV. All tasting was performed using the official tequila glass from Riedel with the spirit served at room temperature.
Cambio Blanco has a clear appearance and
a slightly-creamy body. Upon a swirl, well-defined legs are found slipping down the tasting glass.
On the nose - we detected citrus (tangerine), herbal (mint), vegetal and grassy notes along with a presence of cooked agave. Upon tastings, we found flavors of spearmint, orange, sweet roasted agave, vegetal, honey, and spice (anise and pepper). We also taste some alcohol and light tropical fruit. The lengthy finish has a sweet and spicy feel to it.
Tequila Connection gives Cambio Blanco a very respectable score of 89.7 converting to a Rating of Great ++. Well Done!
Cambio Reposado has a light-gold appearance. It has a creamy mouthfeel. Again, well-defined legs are observed trickling down the tasting glass.
On the nose - we detected sweet fruit (grape), citrus, honey, herbal (mint) and agave. We found some earthy and light funky notes (thinking of aged cheese).
Upon tastings, we found sweet flavors of tropical fruit, citrus and stone fruit, with an overtone of spice (cinnamon). The finish is long with spicy (cinnamon and pepper) and oak notes lingering on. We found the Reposado to be slightly less balanced compared to the Blanco, due to the cinnamon flavor.
Tequila Connection’s average score was 85.1 converting to a Rating of Great. We enjoyed evaluating Cambio Blanco and Reposado, and look forward to tasting more of Cambio's innovative spirits. We suggest you give it a try as well.
